- 250 gr queso Edam

- 4 rabos de cebolla
- 2 rebanadas tocino de aproximadamente 100 gr cada una
- 1 pza limón, ralladura de 1/2 limón

- Hoy quise hacer esto a la parrilla porque ese sabor ahumado que toma es, para mí, delicioso; aunque bien puede hacerse en un sartén y tapado.
En una sartén se asan hasta dorar las rebanadas de tocino.


- En ese momento se asan los chiles poblano y jalapeño.



- Se ponen en una bolsa de polietileno o polipapel (plástico le decimos en mi rancho) a que suden los chiles, aprox unos 10 minutos, para después retirarles las cáscaras quemadas.

- Se hace la ralladura del limón, en mi caso no me llevo bien con el rallador, solemos insultarnos nada más vernos, así que uso el cuchillo para sacar la cáscara y picarla finamente.



- En papel aluminio se coloca un poco de la grasa del tocino.

- Se salpimenta por ambos lados la sábana de pollo.


- Solo en una mitad de la sábana se coloca el queso Edam para después cortar o deshebrar el quesillo y colocarlos en la pechuga.



- Se ponen las rajas, los rabos de cebolla y se espolvorea con la ralladura de limón.



- Se cubre el relleno con la otra mitad de la sábana y se agrega un poco más de la grasa derretida del tocino.

- Se cubre con el papel aluminio ajustando lo más posible, repitiendo todo lo anterior con la otra sábana.


- Se lleva a la parrilla, 10 minutos por lado.

- Se retiran y se deja enfriar el papel aluminio antes de retirarlo y servir.

- Tengo la idea que se puede acompañar con una sopa crema de hongos o una tradicional gravy de res o pollo.
